Madras Curry with Shrimps

Can't wait till summer when the days are longer and it remains light till long after dinner! Because pictures are so much better and brighter with daylight! Look at this delicious madras curry with shrimps! No filter needed. Was home early because I am going to bootcamp tonight and I didn't have any inspiration today. So went home, enjoyed the sun for a little bit and went back to work at home full of energy. Well on to this amazing recipe!


English recipe:


Duration: 30 minutes

The ingredients:
  • 75 g brown basmati rice
  • 100 g wok shrimps
  • 200 g green beans
  • 1 spring onion
  • 1 ts madras curry paste
  • 150 ml coconut milk
  • 1 lime
  • 1 tbs matelote (fish sauce)
  • 2 cm ginger
  • Salt & Pepper
  • 1 tbs olive oil

What you do:
  1. Cook the rice as directed on the package. 
  2. When the rice needs only 15 more minutes you heat up 1 tablespoon olive oil in a frying pan with the teaspoon madras curry paste. Bake for 1 minute before adding the coconut milk. Stir well and bring to a boil.
  3. When it's cooking you need to add the juice of 1 lime, fish sauce and grated ginger with it. Season with salt and pepper and give it a good stir. Then add the shrimps to the pan and cook for 10 minutes. 
  4. Meanwhile, clean the beans and cut of the tips. Cook them for about 8 minutes. Stir them at the end through the curry. Also cut the spring onions into rings. 
  5. Serve the curry on rice and sprinkle with the spring onion rings.

Nederlandse recept - Madras Curry met Garnalen:


Tijd: 30 minuten

De ingrediƫnten:
  • 75 g bruine basmati rijst
  • 100 g wokgarnalen
  • 200 g sperziebonen
  • 1 bosui
  • 1 tl madras curry pasta
  • 150 ml kokosmelk
  • 1 limoen
  • 1 el vissaus
  • 2 cm gember
  • Zout & Peper
  • 1 el olijfolie

Bereiding:
  1. Kook de rijst zoals aangegeven op de verpakking.
  2. Wanneer deze nog 15 minuten moet doe je 1 eetlepel olijfolie in een hapjespan met de theelepel madras curry pasta. Bak voor 1 minuutje voordat je de kokosmelk erbij doet. Roer goed. 
  3. Breng het geheel aan de kook en doe dan het sap van 1 limoen, de vissaus en geraspte gember erbij. Breng op smaak met zout en peper. Roer nogmaals goed en doe dan de garnalen in de pan en kook 10 minuten mee.
  4. Maak ondertussen de boontjes schoon en snijd het uiteinde eraf. Kook deze zo'n 8 minuten. Roer ze aan het eind door de curry. Snijd ook de bosui in ringetjes. 
  5. Serveer de curry op de rijst en besprenkel met de bosui.
