Super Simple Fish Stew

Oh my, one of the best dishes I made! This super simple fish stew is full of flavors and the fish is super tender. So good! If you want to impress quests and don't spend the whole day in the kitchen this dish is definitely the way to go! My day didn't go as planned at all. Everything went wrong from the moment I woke up, but this dinner made the day not completely awful!

It takes 30 minutes due to the rice, but you could also make it with a small whole wheat baguette and then it only takes 15 minutes!


Duration: 30 minutes

The ingredients for 1 serving:

  • 50 g brown basmati rice
  • 1 pangasius filet
  • 1/2 zucchini or 1 small zucchini
  • 1/2 sweet paprika
  • 1/2 leek
  • 2 carrots
  • 2 garlic cloves
  • 150 ml 'tomato frito' (a pureed tomato sauce)
  • 50 ml water
  • 1 ts dried oregano
  • 1/2 lemon
  • 1 tbs olive oil
  • salt & pepper

What you do:
  1. Cook the rice according to the package.
  2. Heat up 1 tbs olive oil in a large frying pan on medium to high heat. Add 2 cloves crushed garlic and give it a good stir. Meanwhile, quickly slice the carrots into thin slices and add to the pan. Then slice the leek into rings and put in the pan with the carrots. Followed by sliced zucchini and paprika pieces. 
  3. Cook for about 5 to 8 minutes until softened. Meanwhile slice the fish into small pieces.
  4. When the vegetables are soft add the tomato frito, water, oregano and season with salt & pepper. Bring the sauce to a boil, then add the fish, lower the heat to low heat, put a lit on the pan and stew for 5 to 6 minutes. 
  5. Serve with the rice and drizzle over some lemon juice when you're ready to eat.
