Grilled Salmon with Mixed Quinoa and Sugar Snaps

I was so busy with the EBook that I completely forgot to post by dinner! But here it is. Used some fancy chef tools (cooking rings) which I got for my birthday to organize the quinoa and doesn't it look great!? Pretty chef worthy in my opinion. Wanted to try out some new combinations, so instead of just having only quinoa I mixed in some pumpkin seeds and pomegranate seeds and seasoned with lemon juice and it was delicious! Way more taste than only quinoa. Also the combination of red and white quinoa is great!



English recipe:


Duration: 15 minutes

The ingredients:
  • 30 g white quinoa & 30 g red quinoa
  • 1 salmon fillet
  • 200 g sugar snaps
  • 1 tbs pumpkin seeds
  • 2 tbs pomegranate seeds
  • 1 ts thyme
  • 1/2 lemon
  • Salt & Pepper
  • Olive Oil

What you do:
  1. Wash the quinoa well and cook as indicated on the package. 
  2. Clean the sugar snaps and cut off the ends. Also remove any wires. Cook for about 4 minutes until al dente. 
  3. Rub the salmon with salt, pepper, thyme and 1 tbsp olive oil. Heat a grill pan over high heat and grill the salmon for about 3 minutes per side. 
  4. Drain the quinoa when it's ready and mix with the pumpkin seeds and pomegranate seeds. Season with lemon juice and serve alongside the salmon and sugar snaps.

Nederlandse recept - Gegrilde Zalm met Quinoa Mix en Sugar Snaps:


Tijd: 15 minuten

De ingrediƫnten:
  • 30 g witte quinoa & 30 g rode quinoa
  • 1 zalmfilet
  • 200 g sugar snaps
  • 1 el pompoenpitten
  • 2 el granaatappelpitten
  • 1 tl tijm
  • 1/2 citroen
  • peper & zout
  • Olijfolie

Bereiding:
  1. Was de quinoa goed en kook deze zoals aangeven staat op de verpakking. 
  2. Maak de sugar snaps schoon en snijd de puntjes eraf. Verwijder ook eventuele draadjes. Kook ze in 4 minuten beetgaar. 
  3. Wrijf de zalmfilet in met peper, zout, tijm en 1 el olijfolie. Verwarm een grillpan op hoog vuur en gril de zalm ongeveer 3 minuten per kant.
  4. Giet de quinoa af wanneer deze klaar is en meng de pompoenpitten en granaatappelpitten erdoorheen. Breng op smaak met wat citroensap en serveer naast de zalm en sugar snaps. 

Eet smakelijk!
